Popeye's fuel

Sunday night, we made my Mum's yummy Spinach pie. We grew up with this dish being one of our favorites. It's incredibly simple and is usually a favorite amongst kids. Might I also mention that Popeye would be proud to see how much spinach Rich and I have eaten in the past 2 days! I have two favorite elements of the pie that compete amongst each other - one is the cheesy spinach and the other is the beautiful filo dough crust. Oooooh, YUM!

Here is the recipe!

Mum's Spinach Pie

Ingredients
1 pack of filo dough
500 mgs of Spinach
1 cup of tasty cheese (we used mozarella and mild cheddar)
1/2 an onion, chopped finely
2 cloves of garlic
2 tbps of butter
Pepper/salt to taste
Nutmeg to taste

  • Heat butter in a pan and add the garlic, then onions until the onions are opaque
  • Add the spinach until warmed through
  • Take off the fire and mix in the cheese
  • Add pepper/salt/nutmeg to taste
  • Warm up the oven (following the directions on the filo pastry box) with an oven tray inside - this helps to keep the base of the pie warm.
  • Following the instructions on the box, begin to layer the bottom layer of the filo dough into the pan
  • Fill the base with the spinach mixure and layer filo dough on top
  • Flute the edges (we didn't as our pan was too deep) and cut small vents to allow for steam
  • Lightly brush either milk or beaten egg on top to make a nice crust
  • Shove into the oven and bake as to the directions on the filo dough box (about 20 mins)

Looks yummy! Do you think the recipe would still work if I used soy cheese?

I think it would. I'm not sure what soy cheese is like (texture, etc). We used a block of cheddar cheese that we grated and then we got already grated mozarella. Next time I want a more nuttier cheese though.

i just made it a month or so ago too. love love love it.

I thought puff pastry and filo dough is the same thing? The filo dough was SO finnicky so maybe I'll use puff pastry next time.
ps - as I was reading your comment about my extra weight, I smiled big as I was wolfing down a waffle soaked in syrup. (wink)
